Season the Meat

Add salt, soy sauce, rice wine, minced garlic, ginger, green onion whites, and white pepper to the ground pork.

Mix Until Sticky
Knead and squeeze the pork mixture until it becomes sticky and well combined.

Add Tofu
USESWrapped Soft Tofu, crumbled into meat (1 chunk)
Crumble tofu into the meat mixture and blend everything together evenly.

Throw and Shape
Slap the mixture firmly against the bowl to remove air, then divide and roll into large meatballs.

Coat with Starch
USESCornstarch, mixed 1:1 water (0 as needed)
Drizzle cornstarch slurry over each meatball to coat the surface.

Deep-Fry Meatballs
Carefully lower meatballs into hot oil and fry until the surface turns golden brown.

Drain the Oil
Remove meatballs from oil and set aside to drain excess oil.

Stir-Fry Cabbage
USESTianjin Cabbage, stir-fry stems first (0.25 bunch)
Stir-fry napa cabbage stems in the pot until fragrant.

Add Meatballs and Soy Sauce
Place fried meatballs into the pot and drizzle soy sauce over them.
STEP 10 OF 12
Cover with Cabbage and Water
USESWater, for braising (600 ml)
Lay remaining cabbage leaves over the meatballs, add water, then cover and bring to a boil on high heat.

Braise Until Cooked
Reduce heat and braise with lid on until meatballs are fully cooked through and juicy.

Garnish and Serve
Sprinkle chopped green onions over the top, then turn off heat and serve.
