Soak the Red Beans
USESRed Bean, soaked, cooked soft (100 gram)
Place red beans in a thermos flask, add boiling water, and seal for several hours until softened.

Boil the Red Beans
Transfer soaked beans to a pot, cover with water, boil on high then simmer for about 30 minutes.

Rest and Drain Beans
Turn off heat, keep lid on for 20 minutes, then drain beans and reserve the cooking water.

Grease the Moulds
Brush oil evenly inside the containers, including the sides, to prevent sticking.

Mix White Layer
USESCoconut Milk, (for white layer) shake well (150 ml)·Water, (for white layer) (120 ml)·White Sugar, (for white layer) (2.4 tablespoon)·Cornstarch, (for white layer) dissolve first (9.6 teaspoon)
Combine cornstarch and water, then stir in sugar and well-shaken coconut milk until smooth.

Cook White Layer
Heat mixture over medium-low heat, stirring constantly until it thickens and becomes smooth.

Set White Layer
Pour white mixture into prepared moulds, spread evenly, then refrigerate for 30 minutes.
STEP 8 OF 12
Mix Red Layer
USESWater, (for red layer) reserved bean water (400 ml)·Coconut Milk, (for red layer) shake well (200 ml)·Cornstarch, (for red layer) dissolve first (23 teaspoon)·White Sugar, (for red layer) (9.6 tablespoon)·Salt (0 as needed)·Red Food Coloring, optional (1 drops)
Combine cornstarch, sugar, salt, reserved red bean water, coconut milk, and optional food colouring until smooth.
STEP 9 OF 12
Cook Red Layer
Heat mixture over medium-low heat, stirring constantly, then reduce to low until the mixture is smooth.
STEP 10 OF 12
Add Beans and Pour
Stir cooked red beans into the mixture, then pour over the set white layer in the moulds.
STEP 11 OF 12
Smooth and Chill
Tap the mould gently to level the surface, then refrigerate for several hours until firm.
STEP 12 OF 12
Unmould and Slice
Remove pudding from the fridge, trim the edges, then cut into small neat pieces to serve.
