Chop Scallion and Onion
USESSpring Onion, whites & greens separated (2 bunch)
Slice scallion into small pieces, keeping white and green parts separate. Dice onion finely.

Season the Rice
USESWhite Rice, day-old preferred (2 cup)·White Pepper (2 teaspoon)·Salt (2 teaspoon)·White Sugar (0.67 tablespoon)
Add white pepper, salt, and sugar to the cooked rice and mix well before cooking.

Crack Eggs into Bowl
Crack eggs into a bowl. Do not beat them — leaving them whole keeps the egg whites crispy.

Heat Oil and Fry Eggs
USESEgg, not beaten (4 whole)·Cooking Oil (4 tablespoon)
Heat oil in the wok over high heat, then pour in the unbeaten eggs.

Stir-Fry Eggs Until Fluffy
Quickly stir and break up the eggs until they puff and turn golden and fragrant.

Add Scallion Whites and Onion
USESOnion, finely diced (50 gram)
Add scallion whites and onion to the wok and stir-fry on high heat until lightly caramelised.

Add and Break Up Rice
Add seasoned rice and use a press-and-push motion to break up clumps without breaking the grains.

Add Soy Sauce
USESLight Soy Sauce, for aroma (4 tablespoon)
Drizzle soy sauce over the rice and stir-fry until a rich, savoury aroma develops.
STEP 9 OF 11
Add Water for Moisture
USESWater, add at end (60 ml)
Splash in a little water and stir quickly to keep the fried rice moist and easy to eat.
STEP 10 OF 11
Add Scallion Greens
Toss in the scallion greens and stir-fry until evenly combined.
STEP 11 OF 11
Turn Off Heat and Serve
Turn off the heat and transfer the egg fried rice to a plate immediately.
