Scrape and Trim Melon
Use a knife to scrape the skin off the fuzzy melon, then cut off both ends.

Soak the Pork

Mix pork slices with a pinch of sugar, salted egg white, white pepper, cornstarch, water, and oil.

Add Ingredients to Pot
USESHairy Gourd, scraped, trimmed (2 stick)·Ginger, peeled, smashed (2 slice)·Salted Duck Egg, yolk separated (2 whole)·Water, boiled first (2750 ml)
Bring water to a boil, then add ginger, fuzzy melon, pork slices, and salted egg yolks.

Boil Then Simmer
Cover and bring to a full boil over high heat, then reduce to low heat and simmer for 15 minutes.

Skim the Impurities
After simmering, skim off any white foam floating on the surface for a cleaner broth.

Add Salted Egg White
Turn to medium heat, pour in the salted egg white, and gently push from the sides to form large egg flowers.

Rest the Soup
Once the soup returns to a full boil, turn off the heat, cover with the lid, and rest for 15 minutes.

Stir and Serve

Remove the lid, gently stir, taste and add salt if needed, then ladle into bowls and serve.
