Pat Scallops Dry
Use paper towels to absorb as much moisture as possible from the scallops.

Season the Scallops

Sprinkle sea salt and black pepper over the dried scallops.

Heat Oil in Pan
Add oil to the pan and heat on high until very hot.

Sear Scallops First Side
USESScallop (Fresh Shell), pat thoroughly dry (20 whole)
Place scallops in the hot pan and sear on high heat for about 15 seconds.

Flip and Sear
Flip each scallop and sear the other side until both sides are golden brown.

Remove Scallops
Take scallops off the heat and let residual heat finish cooking them gently.

Melt Butter
USESButter (Unsalted) (30 gram)
Reheat the pan and add butter, letting it melt over the heat.

Cook Tomatoes and Scallop Trim
USESCherry Tomato, halved (300 gram)
Add cherry tomatoes and any scallop trimmings, stir-frying together briefly.

Add Seasonings
USESGarlic, finely minced (10 clove)·Lemon Juice, freshly squeezed (2 tablespoon)·White Sugar (1 tablespoon)·Water (100 ml)
Add lemon juice, sugar, minced garlic, sea salt, black pepper, and a splash of water.

Stir and Finish Sauce
Stir everything together briefly, then turn off the heat.

Plate the Dish

Arrange scallops and sauce on a plate, top with greens and grated lemon zest.
