Rinse the preserved radish
Place preserved radish in water, rinse briefly to remove dust and impurities.

Soak and squeeze dry
Soak preserved radish for 10 minutes to reduce saltiness, then squeeze out all water.

Finely chop the spring onion into small pieces and set aside.

Combine white pepper, sugar, tapioca starch, soy sauce, and rice wine, then stir until evenly mixed.

Add eggs and spring onion
USESEgg, beaten well (5 whole)·Spring Onion, finely chopped (1 bunch)
Crack eggs into the seasoning mixture and add chopped spring onion.

Dry-fry the preserved radish
USESPreserved Radish, soaked, squeezed dry (60 gram)
Heat the pan with no oil and stir-fry preserved radish until moisture evaporates and it turns fragrant and crispy.

Combine radish with egg
Turn off heat and pour the hot fried radish directly into the egg mixture.

Beat the egg mixture
Use chopsticks to vigorously beat and aerate the mixture so the omelette turns fluffy when cooked.

Pour egg into hot oil

Heat the pan, add oil, then pour in the egg mixture all at once.

Stir centre to set
Use chopsticks to stir in circles at the centre to help the egg set quickly, then reduce to lowest heat.

Cover and cook first side
Put the lid on and cook for 2 minutes until the bottom is golden.

Flip and cook second side
Slide omelette onto a plate, flip it back into the pan upside-down, and cook uncovered for another 2 minutes.
