Marinate the Beef
USESOyster Blade, thinly sliced (307 gram)·Cooking Oil (2.5 tablespoon)·Oyster Sauce, (for marinade) mix well (1 tablespoon)·Rice Wine, (for marinade) mix well (1 tablespoon)·Cornstarch, (for marinade) coat evenly (1.5 teaspoon)
Add rice wine, oyster sauce, cornstarch, and oil to beef. Mix well and set aside.

Sear the Beef
Heat oil in a pan and stir-fry beef until half-cooked, then remove and set aside.

Sauté Aromatics
USESGarlic, minced (5 clove)·Spring Onion, chopped (2 bunch)·Onion, sliced (1 piece)
Heat oil in a clay pot and stir-fry onion, garlic, and green onion until fragrant.

Add Water and Seasoning
USESLight Soy Sauce (1.5 tablespoon)·Salt (0 as needed)·White Pepper (0 as needed)·White Sugar (0 as needed)·Water (533 ml)·Oyster Sauce, (for sauce) stir in (2.5 tablespoon)·Rice Wine, (for sauce) stir in (1.5 tablespoon)
Pour water into the pot, then add oyster sauce, rice wine, soy sauce, salt, sugar, and white pepper.

Bring to a Boil
Increase heat and let the broth come to a full boil.
STEP 6 OF 8
Add Glass Noodles
USESBean Thread Noodles, soak in cold water (100 gram)
Add pre-soaked glass noodles and simmer until they absorb the broth and soften.

Add Beef and Cover
Lay the seared beef on top of the noodles, cover, and cook for about one minute.

Garnish and Serve
USESHot Chilli, sliced (1.3 stick)
Sprinkle chili and chopped green onion on top, turn off heat, and serve immediately.
