Once water is boiling, add a pinch of salt and stir briefly.

Gently lower eggs into boiling water and cook for 6 minutes without a lid.

Remove eggs immediately and submerge in ice-cold water for 5 minutes to stop cooking.

Mix the Marinade
USESLight Soy Sauce, (for marinade) (1.5 tablespoon)·Water, (for marinade) (24 ml)·Mirin, (for marinade) (1 tablespoon)·Rice Wine, (for marinade) (0.5 tablespoon)·White Sugar, (for marinade) dissolve (0.5 tablespoon)
Combine water, soy sauce, rice wine, mirin, and sugar in a bowl and stir until blended.

Crack and Peel Eggs
Lightly tap each egg all over to crack the shell, then peel carefully.

Marinate the Eggs
Place peeled eggs into the marinade and refrigerate for one full day.

Slice and Serve
Cut each marinated egg in half to reveal the jammy, golden soft-boiled yolk inside.
