Rinse Ribs Thoroughly
USESPork Ribs, rinsed, drained dry (530 gram)
Place ribs in a basin, add water, and scrub to remove blood and odour. Repeat three times.

Soak Ribs
Submerge rinsed ribs in clean water and soak for 15 minutes to keep meat juicy.

Drain Ribs Dry
Lift ribs out and squeeze firmly with your hands to remove as much water as possible.

Prepare Aromatics
USESGinger, finely minced (4.5 slice)·Garlic, finely minced (3 clove)·Fermented Black Beans, finely chopped (1 tablespoon)·Red Hot Pepper, finely chopped (0.5 stick)
Crush then finely mince the garlic and ginger. Chop the chilli and black beans into small pieces.

Mix Marinade
USESWhite Sugar, (for marinade) (0.5 tablespoon)·Thick Soy Sauce, (for marinade) (1.5 tablespoon)·Light Soy Sauce, (for marinade) (1.5 tablespoon)·Fish Sauce, (for marinade) (1.5 tablespoon)·Rice Wine, (for marinade) (2.5 tablespoon)
Combine sugar, soy paste, soy sauce, fish sauce, and rice wine together in a bowl.

Coat Ribs in Marinade
Add ribs to the marinade and mix well, then add the minced garlic, ginger, chilli, and black beans. Mix again.

Add Starch and Oil
USESTapioca Starch, (for marinade) coat evenly (2.5 tablespoon)·Sesame Oil, (for marinade) finish (1.3 tablespoon)
Add cornstarch and mix thoroughly, then add sesame oil and mix again to seal in juices.

Marinate Overnight
Cover bowl with cling wrap and refrigerate to marinate for one full day.

Arrange Ribs for Steaming
Spread marinated ribs evenly on a plate ready for steaming.

Steam Ribs
Bring a pot of water to a boil, place ribs inside, cover, and steam on high heat for 15 minutes.

Garnish and Serve

Remove lid, take out the plate, and sprinkle spring onions on top before serving.
