Rinse and Soak Ribs
USESPork Ribs, chopped, soaked (400 gram)·White Vinegar, for soaking (0.5 tablespoon)
Rinse ribs under running water, then soak in water with a splash of white vinegar for 10 minutes.

Prepare Aromatics
USESGarlic, minced (2 clove)·Ginger, finely minced (1.3 slice)·Spring Onion, whites for marinade (1 bunch)·Hot Chilli, sliced (0.5 stick)
Mince garlic and ginger, chop spring onions separating white and green parts, and add chilli if desired.

Bloom Black Beans
USESFermented Black Beans, bloom in hot oil (0.5 tablespoon)·Cooking Oil, pour hot (1 tablespoon)
Add black beans to the aromatics, then pour hot oil over the mixture and stir to release the fragrance.
STEP 4 OF 10
Season the Marinade
USESSalt (0.5 teaspoon)·White Sugar (0.5 tablespoon)·White Pepper (0.5 teaspoon)·Light Soy Sauce, (for marinade) (0.5 tablespoon)·Oyster Sauce, (for marinade) (0.5 tablespoon)
Add soy sauce, oyster sauce, salt, sugar, and white pepper to the bowl, then mix everything well.

Drain and Rinse Ribs
Remove ribs from soaking water, rinse thoroughly under running water to remove vinegar, then drain well.
STEP 6 OF 10
Marinate the Ribs
USESPotato Starch, coat ribs (0.5 teaspoon)
Pour marinade over ribs, mix well, add a small amount of starch, then refrigerate covered for 30 minutes.
STEP 7 OF 10
Prepare the Pumpkin
USESPumpkin, halved, seeded (1200 gram)
Halve the pumpkin, scoop out the seeds, and cut into thick pieces so they hold their shape when steamed.
STEP 8 OF 10
Assemble the Dish
Lay pumpkin pieces flat on a steaming plate, then spread the marinated ribs evenly on top.
STEP 9 OF 10
Steam Until Tender
Steam over high heat for at least 20 minutes, or up to 30 minutes for larger rib pieces.

Garnish and Serve
Remove from steamer, scatter chopped spring onion greens on top, and serve immediately.
