Wash the Sweet Potatoes
Rinse sweet potatoes thoroughly under running water to remove dirt and sand.

Peel and Chop
Peel the sweet potatoes, then cut them into rough rolling-cut chunks.

Rinse the Chunks
Rinse the cut sweet potato chunks again to wash off excess starch for a clearer soup.

Prepare the Ginger
Lightly scrape the ginger skin, then smash it with a knife to release more flavour.

Stir-fry the Ginger
USESGinger, smashed (6 slice)
Over low heat, lightly stir-fry the smashed ginger until fragrant.

Add Water and Sweet Potato
USESSweet Potato, roll-cut chunks (500 gram)·Water, boiling (1000 ml)
Pour in boiling water, then add the sweet potato chunks. Bring to a boil, then reduce to low heat and cook for 10–20 minutes until tender.

Make the Dough
USESGlutinous Rice Flour, kneaded into dough (100 gram)·Caster Sugar, (for dough) dissolved (20 gram)
Mix sugar and hot water into the glutinous rice flour, then slowly add cool water and knead into a smooth dough.
STEP 8 OF 10
Shape and Add Dumplings
Roll the dough into a log, pinch off small pieces, and drop them directly into the simmering soup.
STEP 9 OF 10
Add Brown Sugar
USESBrown Sugar (7.2 tablespoon)
Once most dumplings float to the surface, stir in brown sugar until fully dissolved.

Serve the Soup
Ladle the finished sweet potato dessert soup into bowls and serve warm.
