Mix Miso Sauce
USESMiso, (for sauce) dissolved in water (0.5 tablespoon)·Water, (for sauce) (50 ml)
Combine water and miso paste in a bowl, stirring until the miso is fully dissolved.
STEP 2 OF 11
Cook the Sauce
USESTaiwanese Sweet Chilli Sauce, (for sauce) stir over low heat (3 tablespoon)·White Sugar, (for sauce) dissolve slowly (0.5 tablespoon)
Heat the pan on low, add sugar and stir until melted, then pour in sweet chili sauce and stir until simmering.

Mix the Batter
USESSweet Potato Starch, mixed into batter (10 tablespoon)·Tapioca Starch, mixed into batter (3 tablespoon)·Salt (0.5 teaspoon)
Combine sweet potato starch, tapioca starch, and salt in a large bowl and mix well.

Add Water to Batter
Pour water into the starch mixture in two additions, stirring until a smooth, lump-free batter forms.

Finish Batter with Chives
USESChinese Chives, finely minced (10 gram)
Stir chopped chives into the batter until evenly distributed.

Prep Eggs and Oysters
Lightly beat the eggs in a bowl, then drain the washed oysters thoroughly to remove excess water.

Pour Batter into Pan
USESCooking Oil (2 tablespoon)
Heat oil in a hot pan, stir the batter well, then ladle a portion into the pan and spread it out.

Add Oysters and More Batter
USESLocal Oysters (Require Cooking), drained, patted dry (200 gram)
Place oysters on top of the batter, drizzle a little more batter over them, then add a splash of oil around the edges.
STEP 9 OF 11
Pour in Beaten Egg
USESEgg, lightly beaten (2 whole)
Pour the beaten egg evenly over the omelette and let it set.
STEP 10 OF 11
Flip and Add Vegetables
USESBaby Bok Choy, cut short (100 gram)
Flip the omelette, then place the bok choy on top and fold to cover the greens.

Plate and Sauce
Slide the omelette onto a plate and generously drizzle the warm sauce over the top.
