Crack the Eggs

Egg, lightly broken (5 whole)
Crack eggs into a bowl but do not beat them fully — leave them slightly unmixed.

Heat Oil and Cook Eggs
Heat the pan, add oil, then pour in all the eggs at once.

Gently push eggs around briefly, then return them to the bowl to finish cooking with residual heat.

Stir Fry Tomatoes and Aromatics
USES
Tomato, cut into wedges (2 piece)·Spring Onion, cut into sections (4 bunch)·Garlic, minced (4 clove)
Add more oil to the pan, then add tomatoes, spring onion and garlic and stir fry until fragrant.

Add Seasonings
USES
White Vinegar (5 tablespoon)·Light Soy Sauce (0.5 tablespoon)·Salt (1 teaspoon)·White Pepper (1 teaspoon)
Add soy sauce, salt, white pepper, and vinegar to the pan and let the vinegar aroma cook off.

Add Sugar and Ketchup

White Sugar (2.5 tablespoon)·Ketchup (4 tablespoon)
Add sugar and tomato ketchup, then let the sauce reduce and thicken slightly.

Thicken with Cornstarch

Cornstarch, mixed with water (as needed)
Pour in cornstarch water and stir to create a light, glossy coating on the sauce.

Add Eggs Back In
Add the partially cooked eggs back into the pan and gently fold them into the sauce.
